One of my favorite party themes is a Mexican Fiesta...but with THE volume turned up. So Grab your sombrero and shuffle south to celebrate.
Ingredients
- 2-3 lime wedges
- 4-8 mint leaves, to taste
- 2 tsp. brown sugar
- 3 or 4 pineapple chunks
- 2 ounces white or gold rum
- Splash of pineapple juice
Methods/steps
- Muddle the lime wedges, mint leaves, sugar, and pineapple in the bottom of a highball glass with a wooden spoon or muddler.
- Don’t overdo it, though. The idea is to bruise the ingredients, releasing their flavors, not grind them up.
- Pour in the rum and pineapple juice.
- Fill with crushed ice. Mix thoroughly. Garnish with a sprig of mint.
